Here’s one of the recipes we gave away at our organic cooking class this past Saturday. It’s simple and yummy!
Ingredients:
- 2 medium pears, peeled, cored and cut into small chunks
- 1/2 mango, peeled, seeded and cut into small chunks
- 1/3 cup finely chopped yellow bell pepper
- 1/3 cup finely chopped red bell pepper
- 1/4 cup finely chopped red onion
- 3 T finely chopped fresh cilantro
- 2 tsp canola oil
- Lime juice to taste
Directions:
1.Mix all ingredients in a bowl & refrigerate in covered container for at least 30 minutes or up to 3 hours before serving.
2.Serve with tortilla chips, quesadillas or grilled vegetables.
