Here’s one of the recipes we gave away at our organic cooking class this past Saturday. It’s simple and yummy! pear mango salsa

Ingredients:

  • 2 medium pears, peeled, cored and cut into small chunks
  • 1/2 mango, peeled, seeded and cut into small chunks
  • 1/3 cup finely chopped yellow bell pepper
  • 1/3 cup finely chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 3 T finely chopped fresh cilantro
  • 2 tsp canola oil
  • Lime juice to taste

Directions:
1.Mix all ingredients in a bowl & refrigerate in covered container for at least 30 minutes or up to 3 hours before serving.

2.Serve with tortilla chips, quesadillas or grilled vegetables.
