Turkey Goulash:

Servings: 4
Prep time: 30 minutes

Ingredients:

  • 4 portions egg noodles (about 8 oz)
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 4 portions lean ground turkey (about 1 lb)
  • 2 cups tomato sauce
  • 2 Tbsp fresh basil, chopped
  • 2 Tbsp red wine (optional)

Directions:

1) Prepare egg noodles according to package directions.

2) Lightly coat at large skillet with cooking spray. Saute chopped onion over medium-high heat for 2 minutes. Add bell pepper to onion and saute for another 2 minutes. Add zucchini and saute for 2 more minutes. Remove vegetables and set aside.

3) Add ground ground turkey to the skillet and saute until no longer pink, about 10 minutes.

4) When turkey is done, return vegetables to skillet and add tomato sauce, basil and red wine (if desired). Cook, stirring occasionally for 5-10 minutes until heated through.

5) Place portion of noodles on each plate and top with portion of turkey mixture. Eat and enjoy!
